Alfredo Sauce



3 tbsp. butter (45 mL)
3 tbsp. all-purpose flour (45 mL)
3 cups milk (750 mL)
1/2 cup cream or milk (125 mL)
1 tsp. salt (5 mL)
1/2 tsp. pepper (2 mL)
1/4 tsp. nutmeg (1 mL)
1/4 tsp. cayenne pepper (1 mL)
4 oz. cream cheese, diced (125 g)
1 cup grated parmesan cheese (250 mL)

  1. Melt butter in a large saucepan. Whisk in flour and cook 2 to 3 minutes but do not brown.
  2. Whisk in Milk and cream. Bring to a boil. Reduce heat and simmer gently 5 minutes. Sauce should be smooth and creamy.
  3. Add salt, pepper, nutmeg, cayenne and cream cheese. Cook 2 to 3 minutes until cheese melts.
  4. Stir in Parmesan cheese. Taste and adjust seasoning if necessary.

Combine sauce with 3/4 lb (375g) fettucine, cooked.

Preparation time: 5 min Cooking time: 15 min

Microwave Method: Melt butter in a 3 qt (3L) microwave safe casserole dish on High (100% power), uncovered, for 1 minute. Stir in flour and cook 1 min High uncovered. Whisk in milk and cream. Cook 4 to 5 minutes on High, uncovered, stirring every 2 minutes. Whisk in salt, pepper, nutmeg, cayenne and cream cheese. Cook 1 minute on High, uncovered. Stir in parmesan.
