Mick Gower's Indian Recipes
Vegatable Pakora
- 6 tbsp Plain flour
- 1 tbsp Self-raising flour
- 2 tsp Chilli powder
- 1 tsp Baking powder
- � tsp Salt
- � tsp Freshly ground black pepper
- 2 tsp Turmeric powder
- 3 tsp Curry powder
- 1 tsp Garlic powder
- 2 Beaten eggs
- 1 Large onion peeled and shredded very finely
- 1 Medium potato, peeled and chopped very finely
- �lb Spinach, chopped very finely
- � Pint cold water
Put all the ingredients together in a bowl and mix together thoroughly with your fingers
to form a paste and leave to stand for an hour.
Heat the oil in a deep frying pan and turn the flame to a medium heat take a small
amount of mixture at a time with a spoon or with your fingers, drop into the oil, do not
cook more than six at a time, fry until brown, drain and serve with minty yoghurt sauce.
