Alfisti Cooks Green Bean Vinaigrette Alfa Romeo!

The holidays have come and gone and we are now in the first month of the year 2000. The Christmas party December 12th at our house was well attended. There were plenty of mouth watering dishes brought by our many Alfisti. For the next several months, we will be sharing Christmas party recipes from those who have unselfishly (some under duress) given me their recipes. For our first recipe of 2000 we are presenting Walt Hatcher�s Flagioline Verdi All�agro Alfa Romeo. Walt told me has been making this recipe since his days as a Colnel, when he was stationed in Italy. Walt served this dish to the Army Chief of Staff, while he was stationed at the Pentagon in Washington DC sometime in the early 1970�s. We are in important company!

(Green Bean Vinaigrette Alfa Romeo)

Beans: Wash a pound or more of green beans, remove ends and strings. Leave beans whole and drop into a large pot of boiling water. Cook 5 - 10 minutes. Don�t overcook. Beans should be done but still crunchy. Remove pot from heat. Drain and cover the beans with cold water to stop the cooking.

Sauce: Most vinaigrettes have too much vinegar. The standard mix is 3 parts oil to 1 part vinegar. Start with 10 parts oil to 1 part vinegar. If it needs more sourness, you can up the vinegar content.

Mix olive oil (I use regular olive oil since I find extra virgin too heavy in taste), red wine vinegar, salt, pepper, a couple of garlic cloves (pressed or chopped really fine), two pinches of Italian seasonings (or herbes d�Provence, or oregano) in a pint jar (pickle or mayonnaise) and shake well to blend.

Presentation: Pour the sauce over the green beans, coating them well. Arrange the beans on a platter, garnish with parsley and serve at room temperature or chilled.

Variations: The vinaigrette can also be used on boiled fresh or frozen asparagus. Balsamic vinegar may be used instead of red wine vinegar, but since balsamic is milder in taste, more will be required. For a different twist, add a teaspoonful or two of Dijon mustard (this will require more shaking to blend) or half a can (7 oz) of chopped tomatoes (this requires a larger jar!)

Finally: To prepare the true Sauce Vinaigrette Alfa Romeo, the cook must be facing in the direction of Arese while mixing and shaking the ingredients.

St. Louis is 38 39 N, 090 38 W, Arese Italy is 45 28 N 009 12 E. From St. Louis you must turn 20.35 degrees east of true north in order to face Arese. Contact the Department of Defense, Targeting Department to get the angle of launch for your particular home. Tell them not to factor in the Doppler Effect. As we all know Arese is home to the Museo Storico Alfa Romeo, just 15 km northwest of Milan.
