have too many fresh veggies and they are starting to get soft or have spots. Chop everything up into bite size chunks, including cucumbers, onions, celery, carrots anything just about till you have about 4 to 5 cups of veggies.
Add about 1/3 cup white wine vinegar, 1/4 cup water, 1/4 cup olive oil, 1/2 tsp each black peppercorn and marjoram leaves, and 1/2 each corriander seeds, mustard seeds and salt.
Flowerettes from cauliflower and broccoli work well also, you can use any kind of summer squash and mix them, fresh tomato chunks are really great.
If you prefer you can blanch all the vegggies for a couple of minutes, myself I do them raw.
Cover and refrigerate for at least six hours, Using a slotted spoon stir occasionally. Remove veggies from the marinade serve with toothpicks.
Great at cookouts, I take them in the marinade and take them out there
