I didn't know what else to call this... Measurements are approximate 4 to 6 boneless skinless chicken breast 2 tbsp veggie oil 1 clove fresh minced garlic 1/2 tsp dried thyme 1 1/2 tsp curry powder 1 can undrained stewed tomatoes chopped 2 tbsp lemon juice ( or 1 capfull vinegar) 1/2 cup water salt and pepper cooked rice In a skillet combine all ingreidents excluding chicken and rice. Bring to boil and simmer about 30 mins or so. Let cool. Pierce chicken and marinate in sauce for at least two hours. Toss it all back in the skillet and cook till chicken in cooked through.
