CHICKEN FAJITAS

THIS RECIPE CAME OUT OF A KIDS COOKBOOK I HAVE!
2 whole chicken breasts
1 green pepper
1 red pepper
1 medium onion
2 tomatoes, chopped
1/2 cup each, grated cheddar cheese and Monterey
Jack cheese
salsa
flour tortillas or mini-pita bread

1. Slice the chicken breasts into thin strips. Cook the chicken in a skillet in a small amount of water for 15 minutes or until done (until all of the meat turns white, not pink).
2. Slice the peppers and onions and add them to the chicken. Add more water to the pan and cook for another 15 minutes or until the vegetables are tender.
3. Warm the tortillas in the oven at 250 degrees F. for just a few minutes.
4. To serve, place a warm tortilla flat on your plate. Then spoon the chicken mixture, along with tomatoes, cheese, and salsa, onto the chicken. Roll up the tortilla.

*Note another serving option is to put chicken mixture in pita bread. These are easier to handle.
