Cookies

My husband and I call these cake mix cookies. They are really called Double Chocolate Black Eyed Susans. I leave out the mini chips.

1-18.25 or 19.75 fudge marble cake mix
1 egg
1/3 cup vegetable oil
4 tab. water, divided
1 cup mini chocolate chips

Preheat oven to 350 degrees. Lightly grease cookie sheets. In bowl combine cake mix, egg, oil and 3 tab of water; mix with spoon until blended. Stir in mini chips. In seperate bowl combine 2/3 cup batter, chocolate packet from cake mix and remaining 1 tab water and mix well.

Drop vanilla batter by rounded teaspoonfuls onto prepared cookie sheet and gently press down centers with thumb or back of spoon. Drop chocolate batter by rounded half teaspoonfuls onto top of each cookie.

Bake 10-12 minutes or until very lightly browned. Cool 1 minute then remove to wire racks to cool completely.

*Notes: I find I do not need to cook them as long as the recipe calls for. I prefer these cookies a little soft rather than well done. I have also found the easiest way to drop the batter is to use rounded teaspoons...they work perfectly.
