Where ever you come from and
what ever you call them.....we have had this discussion in chats in the past. What is the
best potato to use and what is the difference....... This is my take on the
subject. There are two types of potatoes Dry and Wet. Dry potatoes include brown skinned
russets, Idahos and baking potatoes. These, in my opinion are best for making baked potatoes
and stuffed potatoes, they bake up fluffy. Wet Potatoes include white, red and new. These
potatoes hold up better for boiling, they keep there shaped for dicing and slicing after
cooked. I like any of these for potato salad. As for mashed potatoes.....I have used both
and I think they do have a different taste, I prefer the wet. When making mashed potatoes, I
always heat up milk before adding.....no
lumps! Maureen
