3 lbs lean pork roast-cut stew size
olive oil
2 white onion chopped
6 med size garlic cloves-minced
3 jalapeno chili-minced
16 oz Ortega style mild canned chili
1 tsp salt
1/4 tsp cumin powder
1/4 tsp dry red chili flakes
1 1/2 cups pork stock
2 tsp liquid smoke flavoring
Brown meat in oil -then add everything else except liquid smoke-simmer till pork is very tender-add liquid smoke last 15 min of cooking time.
Makes excellent main dish-usually served with refried beans and TexMex rice.
