cubed lamb (1/4 Lb per person) cherry tomatoes green pepper (cut into 1" squares) small white onions, peeled marinade for lamb (recipe follows)
Cut lamb into 1/2" cubes and marinate overnight, refrigerated. Remove lamb from marinade and drain on paper towells. Slide cubes onto metal skewers, alternating with 2 cherry tomatoes, a square of green pepper, and a small white onion. Broil for about 10 minutes, basting with reserved marinade, or untill done. Serve immediately.
Marinade 1/4 cup red wine vinegar 1 tsp mixed dried herbs (half rosemary and half thyme is nice) 2 garlic cloves peeled and slightly crushed 1/4 cup olive oil 1 Tbsp soy sauce 1 Tbsp dry sherry
Combine all in a bowl with a whisk. Makes 3/4 cup, enough for 1 1/2 Lbs lamb cubes.
