3 cups shredded lettuce 1 can black beans drained and rinsed 1/2 cup chopped red and/or yellow sweet pepper 1/4 cup sliced green onions 1 8oz carton sour cream 2 finely chopped jalapeno peppers 1 tsp shredded lime peel 1 8oz jar chunky slasa 1/2of a med avocado, halved, seeded, peeled and coarsely chopped 2/3 cup shredded Monterey jack cheese 1/3cup chopped pitted black olives large pkg tortilla chips Line a 12 platter with the lettuce. Stir together black beans, sweet pepper, and green onion. Spread on top of lettuce leaving a lettuce border. Spread sour cream evenly andgently on top of bean mixture, leaving a border. Sprinlke with jalapeno and limepeel. Drain excess liquid from salsa. Stir in avocado, layer atop the sour cream layer, leaving a border. Sprinkle cheese on top. Top with a layer of chopped olives. Serve immediately or chillup to 6 hours. Rip open the chips and enjoy!
