1 small eggplant
1/8 cup vegetable oil
1/8 cup brown rice vinegar
1 tomato
1 green onion
1 tsp chili powder
1/2 tsp oregano
\1/2 tsp basil
Peel cube and cook egg plant until soft.
Combine all ingredients in a blender and blend until creamy
cover and chill at least 2 hours and serve with crackers, nacho's etc.
