2 CUPS RICOTTA CHEESE 1/2 CUP FLOUR 3 EGGS 1/2 CUP SUGAR 1 TABLESPOON VANILLA 2 CUPS LIGHT CREAM 3/3 CUP COARSLEY CHOPPED ALMONDS 1/3 CUP GRAHAM CRACKER CRUMBS
STIR RICOTTA CHEESE BY HAND OR WITH A MIXER UNTIL SMOOTH. MIX EGGS, SUGAR, AND CREAM WITH FLOUR, AND THEN COMBINE WITH RICOTTA CHEESE. ADD THE ALMONDS AND THE VANILLA. MIX WELL. GREASE A 10-INCH FLUTED PIE PLATE OR 8-INCH SQUARE BAKING PAN WITH BUTTER. ADD GRAHAM CRACKER CRUMBS TO BOTTOM OF PAN TO MAKE A CRUST. POUR IN THE CHEESE MIXTURE, AND BAKE IN A 350 DEGREE OVEN FOR 1 HOUR OR UNTIL YOU INSERT A KNIFE IN CENTER AND IT COMES OUT CLEAN.
