Ingredients 1 tablespoon mixed pickling spices 1 piece of ginger root 4 cups sugar 2 lemons sliced thin 3/4 cup water 1 1/2 quarts small yellow or red tomatoes
Rinse tomatoes in cold water Tie spices in a cheesecloth bag Place the spices, sugar, lemon and water in sauce pan Simmer for about 15 minutes Add the tomatoes and cook gently until the tomatoes become clear Stir occasionally to prevent sticking Remove from heat Let stand in a cool place for 12 hours Pack the tomatoes and lemon in jars to within 1/4 inch of top Remove the spice bag from the syrup Boil the syrup 3 minutes Pour over the tomatoes filling jar to within 1/4 inch of top Adjust jar lids Process 20 minutes in a hot water bath
