I just love soups! Soups of all kinds
here a couple my family enjoys.

125g butter
2 stalks of celery, finely chopped
2 carrots, finely chopped
1 onion, finely chopped
1\3 cup plain flour
5 cups good chicken stock
300 ml cream
2 cups cooked, chopped chicken
salt and white pepper
1\2 tsp. ground nutmeg
croutons
chopped fresh parsley

Heat butter on a low heat in a large, heavy based saucepan. Add the celery, carrot and onion and cook, stirring often, for 10 minutes or until ingredients are soft but not brown. Remove from heat and stir in flour. Return pan to heat and cook for 2 minutes, stirring constantly.
Remove pan from heat and gradually stir in stock and cream. Return to heat and stir constantly over medium heat until mixture boils and thickens. Stir in chicken and simmer uncovered for 2 to 3 minutes.
Season to taste with salt and white pepper, add nutmeg. Serve soup topped with croutons and parsley.
