1 envelope Lipton Recipe Secrets Golden Onion Soup Mix
5 cups water
2-1/2- to 3-pound chicken, cut into 8 pieces and skinned
2 medium carrots, coarsely chopped
1 large stalk celery, coarsley chopped
1 teaspoon thyme leaves
3 peppercorns
1 bay leaf (optional)
1/2 cup uncooked regular rice*

In large saucepan, thoroughly blend golden onion soup mix with water. Add remaining ingredients except
rice. Bring to a boil, then simmer covered 45 minutes or until chicken is tender. Remove chicken and bay
leaf; cool slightly. Remove meat from chicken bones and cut into bite-size pieces; set aside.
Meanwhile, bring soup mixture to a boil and stir in uncooked rice. Reduce heat and simmer covered 20
minutes or until rice is tender. Return chicken meat to soup mixture and heat through. Makes about 4
(1-3/4-cup) servings.
*Substitution: Use 1/3 cup egg pastina. Taste Tested Recipe from The Lipton Kitchens
