1 lb. Italian sausage (*see note) 3/4 C green pepper, chopped 3/4 C onion, chopped 2 cloves garlic, minced 1 TBS Olive Oil 2 tomatoes, diced 8 mushrooms, sliced 1 2-1/4 oz. can olives salt and pepper to taste 2 1/2 C mashed potatoes 1/4 c parmesan cheese 2 TBS chopped parsley or basil ~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~ Preheat oven to 350. Crumble sausage and brown in skillet; drain. Spoon meat into a shallow baking dish (1-1/2qt.) In skillet over medium heat saute green pepper, onion, and garlic in hot olive oil for 5 min. Stir in tomatoes, mushrooms, olives, basil and seasonings; remove from heat. Meanwhile, spread mashed potatoes over meat, spreading to edges of dish and smoothing surface. Spoon sauteed vegetables over potatoes to within 1 inch of edge of dish. Sprinkle top with parm. cheese and parsley. Bake 30-35 min. or until very hot and top is lightly browned.
*Note: If you prefer use ground beef and season while browning.
