Zucchini Italian

This is an easy dish, serve with salad and lots of bread.

1 lb. ground beef, extra lean
1 small onion, minced
4 tomatoes med, peeled and sliced
2 C 'Garden Fresh' tomato sauce
1/2 tsp oregano
1/2 tsp basil
1/4 tsp rosemary
4 zucchini, medium
salt and pepper to taste
1 C ricotta cheese
1 C cottage cheese (small curd)
2 eggs
4 oz. mozzarella cheese, grated

Preheat oven to 375. In large skillet, saute beef and onion; drain. Add tomatoes, tomato sauce, and seasonings; simmer uncovered for 15 min. or so stirring occasionally. Slice zucchini lengthwise (to resemble a lasagne noodle) about 1/4 inch thick. Grease a 9x13 baking dish and arrange 1/2 the slices on bottom; sprinkle with salt and pepper. Blend ricotta, cottage cheese, and eggs; spread over zucchini. Top with 1/2 mozzarella and 1/2 meat sauce. Layer with remaining zucchini, mozzarella, and sauce. Sprinkle with Parmesan Cheese and bake uncovered for 40-50 min. Let stand a few min. before cutting.
