Recipes for pasta that you can prepare in less than 20 minutes.
1 pound of Linguine
3/4 can of ripe black olives (approximately 30)
2 eggs
1 stick of softened butter (roughly 110 grams)
100 grams of shredded Parmesan cheese
While the Linguine is cooking, cream the butter in a bowl using a fork or a whip until
smooth, add the two eggs and beat thoroughly. Continue to blend the mixture while the
Linguine is cooking, adding the cheese, and a pinch of salt. Add the pitted olives and toss
with the boiled pasta. Serve immediately, while hot. If you prefer to have a little extra
flavor, add some small pieces of fried pancetta (bacon). I serve this with a cooked green
vegetable, hard crusted European bread, and a light white wine
