1 Saut, the prosciutto or bacon in the olive oil until desired doneness.
2 Add the onion, garlic, and spinach. Saut, the spinach until it is limp.
3 Season the spinach with salt, nutmeg, Parmesan cheese, and pepper. Serve immediately while still warm.
