6 medium potatoes 1 medium onion, minced 1 cup sour cream 1 teaspoon salt 1 tablespoon parsley, chopped 4 slices bacon 2 tablespoons vinegar 1 tablespoon prepared mustard 1/4 teaspoon pepper __________________________________________________ Boil, peel and cube potatoes. Fry bacon in skillet, remove, drain and crumble. Pour off excess drippings, reserving 1/4 cup i skillet. Saute onion until tender. Stir in vinegar, sour cream, prepared mustard, salt, and pepper. Add potatoes, crumbled bacon and parsley. Toss slightly with dressing. Heat until piping hot and serve.
