Comments I got this recipe from my mother: 6 medium sized potatoes, 2 eggs, 3/4 cup flour, 1/2 cup breadcrumbs, 1/4 tsp ground nutmeg, 2 tsp salt. Boil potatoes in their jackets. Drain and allow to cool. Skin and press through ricer. Add other ingredients and mix well. Form into balls about the size of golf balls and place on paper towels to absorb moisture. When ready to cook, bring about 3 cups of water to a boil. Add a few dumplings at a time. When they rise to top, allow to cook for 3 minutes. Remove to a warmed plate. Continue until all dumplings are cooked. Serve with sour beef. You can use instant potatoes made just with water (about 3 cups) and allow to cool before mixing with the other ingredients. I have included this recipe in my cookbook.
