2/3 c cornmeal 1 1/3 cup flour 2 TB sugar 1/2 tsp salt 1/4 tsp ceyenne 4 tsp baking powder 3/4 cup milk 13 cup sour cream 1/4 cup oil 1 egg beaten 1 4 oz. can green chilies chopped 1/2 cup grated cheddar cheese 1 small onion minced
Combined together cornmeal, flour, sugar, salt, ceyenne and baking powder in a large bow.
In a separate bow mix milk, sour cream, oil and egg.
Add to dry ingredients along with green chilies and cheese and minced onions.
Mix just until moistened being careful not to overmix
Fill greased muffin tins 2/3 full.
Bake in preheated oven at 375 degrees for about 20 minutes or until golden brown. Turn out of pan onto a cooking rack immediately
