Banana Bread

2/3 c. sugar
1/3 c. shortening
2 c. all purpose flour
2 t. baking powder
1/4 t. baking soda
1/4 t. salt
1 c. ripe mashed bananas

Note: This recipe does Not contain eggs and milk. In a large bowl, cream sugar and shortening for about 5 min. Will not be smooth. Combine flour, baking powder, baking soda and salt. Add to creamed minture alternately with bananas, beating after each addition. Batter will be thick. Spoon into a greased 9"x5"x3" loaf pan. Bake at 350 for 40-45 min or until bread tests done with toothpick. Cool in pan 10 min. before removing to wire rack. Yield: 1 loaf
