62 ounces black beans, canned, plus liquid* 2 tablespoons oil 2 medium chopped onions 1/2 cup chopped green bell peppers 28 ounces canned tomatoes -- chopped, plus liquid 1/2 teaspoon salt 2 tablespoons cumin 2 teaspoons paprika 2 tablespoons chili powder 1/4 teaspoon cayenne pepper powder 8 tablespoons shredded cheddar cheese, optional
*4 (15.5 oz) cans of black beans Sauté onion and peppers in the oil, stir in beans, tomatoes and spices. Let simmer for 20 minutes, adjust seasoning to taste and spicy heat preference and serve. Top with grated cheese, if desired. Serves 6
