For those of you who were in the chat room last night and heard the "How I Met My Husband Story", I thought I would give you a little sampling of the food we found in Savannah while on our honeymoon. This is from the restaurant "Spanky's" in Savannah and is "dee-lish". My husband loves his chili with quiche. Both of these recipes come from "Savannah Style", one of the four Savannah area cookbooks I have. (Did I mention I collect cookbooks from places we visit?) This chili is spicy, but oooohhhh so good. I cut the chili powder down(by 1 tablespoon), you can always "Kick it up a notch" as Emeril would say. (And by the way, I own one --so far-- of his books.) Of course I also changed the recipe for the quiche. I believe we should "tweek a recipe until it squeaks perfection". Do try this chili/quiche combination. I think you'll love it! And if I haven't bored you all to tears of yet, I thought I would mention that our two year wedding anniversary is coming up in the next couple of weeks and I am blissfully happy.
2 pounds ground beef 2/3 cup onions, chopped 1 cup green pepper, chopped 3 tablespoons chili powder 2 teaspoons cumin 2 teaspoons salt 1 teaspoon black pepper 2 pounds whole tomatoes, chopped, do not drain 1 pound tomato sauce 2 pounds kidney beans, do not drain
Brown ground beef; pour off fat. Add remaining ingredients and cook over low heat for an hour, stirring often. Serves 6
