1 3/4 cups all-purpose flour 1/3 cup plus 2 tablespoons sugar 1 tablespoon plus 2 teaspoons poppy seeds 2 teaspoons baking powder 1/4 teaspoon salt 1 cup skim milk 3tablespoons vegetable oil 1 tablespoon grated lemon rind 1 tablespoon fresh lemon juice 1 egg, lightly beaten Vegetable cooking spray
Combine first 5 ingredients in a large bowl; make a well in the center of mixture. Combine milk and next 4 ingredients; stir well. Add to dry ingredients, stirring just until moistened. Divide batter evenly among 12 muffin cups coated with cooking spray. Bake at 400 deg for 25 minutes or until golden. Remove from pans immediately; let cool on a wire rack. Yield: 1 dozen
