I'm not a big fan of banana nut bread, but this one is delicious.
1/4 cup oil 1/2 cup margarine 1 cup sugar 2 eggs 3 bananas, mashed 1 1/2 cups all-purpose flour 1 teaspoon baking soda 1/2 teaspoon salt 1 teaspoon apple pie spice 3/4 cup walnuts,chopped
Heat the oven to 325° F. Cream butter, sugar and oil. Add eggs and mashed bananas. Mix all dry ingredients in a small bowl; stir in to the creamed mixture. Add nuts. Pour into greased and floured mini loaf pan(8). Bake for 30-35 minutes. NOTES : Cool completely. Wrap individual loaves in plastic wrap. Freeze. Stays for a good 3 months. Microwave for a quick breakfast with a glass of milk or put in a lunch box and it will be thawed by lunch time.
