1 cup chopped onion 1/2 cup diced celery 1/4 cup vegetable oil 1-pound can tomatoes 2 tablespoons chopped parsley 2 bay leaves 1-1/4 teaspoons salt 1/4 teaspoon pepper 1 pound fish fillets __________________________________________________ Saute onion, and celery in oil. Add tomatoes, parsley, bay leaves, salt and pepper. Cover and simmer for 20 minutes. Add fillets and cook for 10-15 minutes. Place fish on platter and pour sauce over it.
