1 Quart of Oysters in juice 1/2 stick real butter - not margarine 1/2 cup chopped celery medium bite size 1/2 cup chopped onion medium bite size 1 to 2 cups sliced fresh mushrooms 1 cup small diced fresh potatoes 2 cans cream of mushroom soup - any kind In a sauce pan pour in oysters and put in butter melt with juice and add celery, onion, potatoes and fresh mushrooms saute till just about tender, add both cans of cream of mushroom soup You can thicken the sauce with instant mashed potatoes till it reaches a good pot pie consistency. I use frozen pie shells for this sometimes, and sometimes make my own, and sometimes just use canned biscuit. Either way prebake pie shells and fill with filling and put on a top crust and bake till top crust is done in an oven equal to baking biscuits as far as temperature, probably 350 to 375 Or fill a shallow baking dish and cover top generously with flaky canned biscuits and bake following can directions until biscuits are brown and well done. Option, you may add some diced carrot if you want, the oyster tends to flavor the mushrooms so they taste kind of like oysters too. A favorite local recipe. Kathy
