My grandmother made these, hence OYSTERS TOCCO, Tocco being her last name. Rock salt 12 oysters on the half shell 1/2 tablespoon fine, dry plain bread crumbs (use my grandmother's bread, if you can find it) Pepper, fresh milled 1/2 tablespoon chopped parsley from the garden 2 tablespoons good olive oil Lemon juice, fresh squeezed from the tree in the backyard Preheat oven to 500 degrees F. Use baking pans big enough to hold the oysters without overlapping. Spread the rock salt. Put the oysters (in their half shells) side by side in the rock salt. Top each with a sprinkling of bread crumbs, some pepper, a little parsley, and a few drops of olive oil. Place the baking dishes in the uppermost level of the oven. Bake for 3-4 minutes. Before serving, drizzle each with a little lemon juice. Serve with additional lemon wedges at the table. Giuseppe (aka gardengonzo)
