These courses teach students to fight with honour. Some courses (notably the unarmed martial arts courses) already teach students to use their new skills ethically, but many others simply teach the skills to the students and trust that they will use them wisely. If you worry about your students misusing their combat training, make sure that they take some of these courses. If you don't worry about that, send your students anyway so that they can learn to exploit the restrictions an honourable fighter puts on him/her/its self.
