Food is essential for nutrition and energy

1.  chemical additives--flavor, texture, decoration including preservatives

      -27lbs/year/person

      -antibiotics are added in animal feed

      -MSG

2.  Inherently poisonous--mushrooms (p623 fig22.16--Amanita)

            -Clavicips purpura

            -ergot alkaloid fig 22.15

      -shellfish--have some glands that must be removed before cooked

            -has paralytic toxin in it

      -fish--skin (Barracuda, snapper, Amberjack) has Ciguatera toxin in the skin

      -Scombrotoxin--tuna, Mahi Mahi

3.  microbial hazards

      -infections

      -toxins--poisoning

      -change food into form that is responsible for sickness

      -spoil food--waste
