Oatmeal

50 light caramels (14
ounce package)
1/2 cup evaporated milk
2 cups all-purpose flour
2 cups quick cooking oats
1 1/2 cups packed brown
sugar
1 teaspoon baking soda
1/2 teaspoon salt
1 cup butter, melted
2 cups semisweet chocolate
chips
1 cup chopped walnuts
Preheat oven to 350 degrees F (180 degrees C). Unwrap caramels and
melt caramels with milk in saucepan. Cool slightly. In a separate
bowl, combine remaining ingredients, except for chocolate chips and nuts.
Press half of oatmeal mixture into a greased 13 x 9 inch pan. Bake for
10 minutes. Remove from oven; sprinkle crust with chocolate chips
and nuts and drizzle caramel mixture over all. Cover with remaining oatmeal
crumbs; press slightly. Bake for 15 to 20 minutes longer.

OATMEAL COOKIES
1 c. shortening
1 c. granulated sugar
1/2 c. brown sugar
1 beaten egg
1 1/2 c. all-purpose flour
1 t. baking soda
1 t. cinnamon
1 1/2 c. quick rolled oats
3/4 c. finely crushed walnuts
or pecans
1 t. vanilla
Additional granulated sugar,
as needed
Cream
together shortening and sugars in large mixing bowl with electric mixer
at high speed. Add
egg and vanilla. Sift together
flour, baking soda and cinnamon; add to the creamed mixture. Stir in oats
and nuts. Chill dough 1 hour. Preheat oven to 350. Roll dough into walnut-sized
pieces and place on a GREASED cookie sheet. Lightly butter the bottom of
a small glass, dip it in sugar, then press cookies to flatten. (Dip glass
in additional sugar as needed.) Bake 10 minutes.
Oatmeal Raisin Cookies
3/4 cup butter or margarine, softened
3/4 cup white sugar
3/4 cup brown sugar
2 eggs
1 teaspoon vanilla extract
1 1/4 cups all-purpose flour
1 teaspoon baking soda
3/4 teaspoon ground cinnamon
1/2 teaspoon salt
2 3/4 cups rolled oats
1 cup raisins
Preheat oven
to 375 degrees F (190 degrees C). In large bowl, beat butter
or margarine, sugar and brown sugar with electric mixer til well mixed.
Add eggs and vanilla and beat til creamy. Stir together flour, baking
soda, cinnamon and salt, gradually add to sugar mixture, mixing well. Stir
in oats and raisins. Drop by teaspoon onto ungreased cookie sheet.
Bake 8 to 10 minutes or until golden brown. Cool slightly, remove from
sheet wire rack. Cool completely.
