Apple Coffee Cake
2 cups peeled, sliced apples
(2 to 3 apples)
1 tablespoon lemon juice
1 1/2 cup enriched flour
(*)
1/2 cup sugar
2 tspns baking powder
1 tspn salt
1 egg, beaten
2/3 cup milk
3 tablespoons oil
2 tablespoons butter,
melted
1/4 cup brown sugar
1/2 tspn cinnamon
Toss the apples
with lemon juice to prevent browning. Stir together the flour, sugar, baking
powder and salt. Combine
the eggs, milk and oil. Add the liquid all at once to the flour mixture,
stirring only until the flour is moistened. Pour the batter into a greased
9 inch round layer pan. Arrange the apple slices over the batter. Drizzle
the butter over the apples. Mix the sugar and the cinnamon, and,
sprinkle over the apples. Bake in preheated 400 degree F. oven for 25 to
30 minutes, or until the cake tester comes out clean.
(*) NOTE: Spoon the flour into
a dry measuring cup, level. Do not scoop.
If self rising flour
is used omit baking powder and salt.
