MMMMM----- Recipe via Meal-Master (tm) v8.05 Title: Mexican Rice Categories: Main dish, Mcdougall, Vegetarian Yield: 6 servings -formatted by S.Grabowski 2 c Cooked brown rice 1 lg Chopped onion 1 md Chopped green pepper 2 Chopped scallions 1/2 lb Sliced mushrooms 2 Cloves cruched garlic 1/4 c Chopped chilies 1 lb Can chopped tomatoes 2 oz Sliced black olives 1 cn Artichoke hearts 1 c Corn kernals 1/4 c Chopped fresh coriander 2 ts Chili powder 1 ts Cumin 1 ds Tabasco sauce Using a large pot, saute the onion, green pepper, scallions, and garlic in 1/4 cup water for 5 minutes. Add the mushrooms and saute 5 minutes more. Add the remaining ingredients. Mix well. Cook over medium low heat 10 minutes until heated through. Stir occasionally. Serve with salsa to spoon over top.
