MMMMM----- Recipe via Meal-Master (tm) v8.05 Title: Pea and Potato Curry Categories: Main dish, Mcdougall, Vegetarian Yield: 6 servings -format by S.Grabowski 2 Chopped onion 1 ts Grated gingerroot 1 Clove pressed garlic 1 ts Grated cumin 1 ts Grated coriander 1/2 ts Tumeric 1/8 ts Cayenne 2 Tomatoes cut into chunks 4 c Cooked & chopped potatoes 1 1/2 c Frozen & thawed peas 3 tb Chopped fresh coriander In a non-stick frying pan, heat 1/2 cup water. Add onions, gingerroot and garlic. Saute for a few minutes until onions soften slightly, then add spices and 1/3 cup more water. Cook and stir over high heat for several minutes. Remove from heat. Add remaining ingredients and simmer apx. 30 minutes covered.Remove from heat. Garnish with fresh coriander before serving. Serve over brown rice or rolled up in a chapati.
