      Title: Potatoes With Spiced Cheese, Tomato And Onion Sauce

      Yield: 8 servings
 
      2 tb Butter
      4    Scallions, with tops
    1/2 c  Finely chopped onions
      5    Tomatoes, peel, seed, chop
    1/2 c  Heavy cream
      1 ts Fresh coriander (cilantro)
    1/4 ts Dried oregano
           Ground cunim
    1/4 ts Salt
           Black pepper
      1 c  Grated mozzarella cheeese
      8    Large potatoes, peel, boil
 
  In a large, heavy skillet, melt butter over moderate heat. When foam
  subsides, add scallions and onions; cook, stirring frequently, for 5
  minutes, or until onions are soft and transparent, but not brown. Add
  rest of ingredients except sour cream. Cover and simmer until
  potatoes are soft, about 30 min. Add sour cream and stir well. Heat 5
