MMMMM----- Recipe via Meal-Master (tm) v8.05 Title: Creamy Tomato Onion Soup Categories: Low-cal, Soups, Low-fat, Low salt Yield: 3 servings MMMMM-----------------FROM MORI-NU TOFU PACKAGE---------------------- 3/4 c Onion, chopped 3 tb Chicken stock, defatted 2 c Tomatoes, fresh pureed OR 2 c Tomatoes, canned, unsalted 1 ts Sweet basil 2 md Garlic cloves, pressed OR 1 tb Garlic powder 1/4 ts Pepper, coarsely ground 10 1/2 oz Tofu, soft, drained MMMMM--------------------------OPTIONAL------------------------------- Salt Margarine or butter 1. In a medium saucepan, saute onions in chicken stock until transparent. 2. Add pureed tomatoes along with the next 3 ingredients. Simmer 10 - 15 minutes. 3. In a blender or food processor, process tofu until smooth and stir into the tomato mixture. Simmer and serve hot. Makes 3 servings of 8 oz. each.
