MMMMM----- Recipe via Meal-Master (tm) v8.05 Title: Thai Chicken Pizza Categories: Pizza, Poultry, Vegetables, Main dish Yield: 8 servings MMMMM-----------------WALDINE VAN GEFFEN VGHC42A---------------------- 3/4 lb Chicken breasts; bone, skin, -pound, 1/4" strip 1/4 c Fresh lime juice 1 tb Fresh cilantro; chopped 1 cl Garlic; sliced thin 1/4 ts Salt 2 ts Fresh ginger; grated 1 tb Olive oil 3 Green onions; chopped fine 1 lg Carrot; julienne strips 1 Red pepper; julienne strips 1/2 ts Salt 1 tb Peanut butter 1 ts Red-pepper sauce 1 ts Soy sauce 1 ts Opriental sesame oil 1 ts Water 1 12" pizza crust 2 tb Peanuts; coarsely chopped 1 tb Fresh cilantro; chopped Preheat oven to 450~. Combine chicken strips with lime juice, cilantro, garlic, salt and ginger; toss. Let stand 15 minutes. Drain chicken; pat dry with paper towels. Heat olive oil and add green onions, carrot, red pepper strips and salt; cook until tender-crisp, 3 to 4 minutes. Add chicken to veggie mixture and cook just until chicken is no longer pink, 2 to 3 minutes. Combine peanut butter, red-pepper sauce, soy, sesame oil and water until well blended. Spread over crust.
