Any prepared marinara sauce can be used in these recipes. A mild sauce is prefered so that the flavors of the other ingredients won't be overpowdered. When spreading sauce or other ingredients, leave a 1" border to allow the crust to crisp. When purchasing cheese, buy 4 oz for every cup of shredded cheese called for in the recipe. One pound of mozzarella, shredded, will yield 4 cups. To make soft cheese like fontina or mozzarella easier to shred, place in the freezer fo 20 minutes before shredding. All pizzas should be baked in a preheated 450~ oven for 10 minutes, except where noted. To cut the pizza, transfer to a cutting board and use a sturdy pizza wheel or a very sharp, long chef's knife. Sharp kitchen scissors also work well for cutting pizza. MMMMM
