MMMMM----- Recipe via Meal-Master (tm) v8.05 Title: Chunky Vegetable Chowder Categories: Low-fat, Mcdougall Yield: 1 servings 2 c Red potatoes; cut into -chunks 2 1/2 c Vegetable broth 1/2 c Chopped onion 1/2 c Chopped green bell pepper 1/2 c Chopped red bell pepper 1/2 c Chopped yellow or orange -bell pepper 1/4 c Unbleached white flour 3 c Soy or rice milk 1 tb Soy sauce 2 ts Chopped fresh basil 1/4 ts Ground white pepper Place the potatoes and 2 cups of the broth in a saucepan. Bring to a boil, reduce heat, cover, and cook for 10 minutes. Set aside. Do not drain. Meanwhile, place the remaining 1/2 cup vegetable broth in another saucepan. Add the onion and bell peppers. Cook, stirring occasionally, for 6 minutes. Stir in the flour. Add the remaining ingredients and cook, stirring frequently, until thickened. Add the cooked potatoes and broth. Heat through and serve.
