MMMMM----- Recipe via Meal-Master (tm) v8.05 Title: Variation of McDougall Oatmeal Muffins Categories: Mcdougall, Muffin, Cake Yield: 2 dozen 1 C uncooked oatmeal 1 C orange or apple juice 1 C flour : 1 Tb baking powder : 1/2 ts salt : 1 ts cinnamon : 1/3 C raisins : 1 ts Ener-G egg replacer; -mixed with : 2 Tb water & beaten till frothy : 2 Tb molasses : 2 Tb juice Preheat oven to 400 (350 for dark pan). Mix oatmeal & 1 C. juice, let stand 10 min. Mix flour, baking powder, salt & cinnamon in separate bowl. After 10 min. add Egg Replacer mix, raisins, molasses & remaining juice to oats. Add dry ingredients, combine till just moistened. Fill muffin tins & bake 15 to 20 min. Cool on rack. (You must use a GOOD teflon muffin tin or use Pam. They will fuse for life to paper liners, I know - I tried them - not a pretty sight but my kids were amused.) In my oven 17 min. works best.
