MMMMM----- Recipe via Meal-Master (tm) v8.05 Title: Gingered Green Grains Categories: Low-fat, Mcdougall Yield: 1 servings 1/3 c Water 1/2 c Finely chopped onion 1/2 c Finely chopped green bell -pepper 1/2 c Shredded carrot 2 ts Curry powder 1 ts Minced fresh garlic 1 ts Sambal oelek 1/2 ts Grated fresh ginger root 2 c Cooked brown rice 1 c Cooked quinoa 1 cn Garbanzo beans; (15 oz) -drained And rinsed 1 tb Soy sauce 6 c Shredded kale or other -leafy greens 2 tb Chopped cilantro Place the water, onions, bell pepper, and carrots in a large nonstick frying pan. Cook, stirring frequently, for 4 minutes. Add the curry powder, garlic, Sambal Oelek, and ginger. Cook for 1 minute longer. Add the grains, beans, and soy sauce. Cook, stirring occasionally, for 2 minutes. Add the kale and cilantro and cook for an additional 3 minutes. Serve warm or at room temperature. Servings: 4 Preparation Time: 10 minutes (need cooked rice and quinoa) Cooking Time: 10 minutes Recipe Hint: Use a food processor to shred the kale quickly. This is quite spicy because of the Sambal Oelek, a hot chili paste. If you don't like spicy foods, reduce the amount used by at least one half This may also be made with barley in place of the rice.
