MMMMM----- Recipe via Meal-Master (tm) v8.05 Title: Fettuccine Alfredo Low-Fat Categories: Pasta, Low-cal, Low-fat Yield: 4 servings 1 tb Margarine 2 sm Garlic cloves; minced 1 tb Flour 1 1/3 c Milk; skim 2 tb Cream cheese product/light 1 1/4 c Parmesan cheese, grated Fresh 2-1/2 oz. divided 4 c Fettuccine, cooked/hot 2 ts Parsley; chopped-fresh Freshly ground black pepper Melt margarine in a saucepan over medium heat. Add garlic; saute 1 minute. Stir in flour. Gradually add milk, stirring with a wire whisk until blended; cook 8 minutes or until thickened and bubbly, stirring constantly. Stir in cream cheese, cook 2 minutes. Add 1 cup Parmesan cheese, stirring constantly until it melts. Pour over hot cooked fettuccine; toss well to coat. Top with remaining 1/4 cup Parmesan cheese, fresh parsley, and black pepper.
