MMMMM----- Recipe via Meal-Master (tm) v8.05 Title: Saucy Potato Skillet Supper Categories: Low-fat, Main dish, Vegetarian Yield: 4 servings 5 c Frozen southern style Hashed brown potatoes 1/2 c Chopped onion 1/2 c Chopped green bell pepper 14 oz Jar spaghetti sauce 7 oz Can whole kernel corn 3/4 c Shredded l/f mozzarella Cheese Heat large nonstick skillet over medium heat until hot. Add potatoes, onion and bell pepper. Cover; cook over medium heat for 8 to 10 minutes or until potatoes are hot and bell pepper is crisp-tender, stirring occasionally. Stir in spaghetti sauce and corn. Reduce heat; cover and simmer 5 minutes or until thoroughly heated. Sprinkle with cheese. Cover; cook an additional 1 minute or until cheese is melted.
