MMMMM----- Recipe via Meal-Master (tm) v8.05 Title: What's Up Doc Soup Menu Categories: Dam, Soups Yield: 2 Servings 2 tb Butter or margarine 1 sm Garlic clove, crushed 1/2 c Onion, thinly sliced 1 1/2 c Carrots, finely grated 2 c Chicken broth, defatted 1 ts Sugar 1/2 ts Orange zest 1/4 c Orange juice 1/2 c Evaporated skim milk 2 ts Cornstarch 1 tb Cold water Salt & pepper Parsley Carrots, grated 1) In small saucepan, melt butter. Add garlic and onion and saute until onion is translucent. 2) Add carrot, broth and sugar. Simmer 10 minutes, or until carrot is tender. Puree. 3) Stir in orange zest, juice, and milk. 4) Combine cornstarch and water and stir into soup. Continue to stir over medium heat until soup has thickened slightly. 5) Add salt and pepper to taste. Garnish with parsley and carrot, if desired.
