MMMMM----- Recipe via Meal-Master (tm) v8.05 Title: Spicy Spud Categories: Dam, Low-cal, Microwave Yield: 1 Serving 1 sm Potato; russet 1/4 c Cottage cheese; fat free 1 tb Salsa 1 tb Cilantro; chopped Paprika Scrub potato and pierce with fork on both sides Microwave on HIGH 3 to 5 minutes, or until potato feels soft when pressed. (Turn potato over after 2 minutes for more even cooking) Let stand 2 or 3 minutes Slice potato in half and scoop potato pulp from shell, leaving 1/4 inch border In a small bowl, mash potato pulp with cottage cheese, salsa, and cilantro Spoon mixture back into the shells. Sprinkle with paprika Microwave on HIGH 2 minutes, or until heated through. NOTE: for variety, try red skinned or white rose potatoes.
