MMMMM----- Recipe via Meal-Master (tm) v8.05 Title: Johnny Appleseed Pancake Categories: Dam, Breakfast, Low-cal Yield: 2 Servings 1 sm Green apple 1 tb Sugar 1/2 ts Cinnamon 2 ts Butter; or margarine 2 Eggs; separated 1/4 c Non-fat milk 1 tb Flour 1/4 ts Nutmeg 1/4 ts Baking powder 1) Preheat oven to 400 degrees. Peel, core, and cut apple into thin slices. @) In bowl, mix half of sugar with cinnamon and toss apple slices. 3) In 9-inch non-stick oven-proof skillet melt butter. Arrange apple slices over bottom of skillet. 4) Cook over low heat for 5 minutes. 5) Meanwhile, in medium bowl beat egg whites until soft peaks form. 6) Add remaining sugar and continue to beat until firm and glossy. 7) In small bowl, beat together egg yolks, milk, flour, nutmeg, and baking powder. 8) Fold yolk mixture into egg whites. 9) Pour batter over apples and spread evenly. 10) Bake 12 minutes. Invert onto heated serving plate and cut in wedges.
