MMMMM----- Recipe via Meal-Master (tm) v8.05 Title: Cheese and Chile Souffle Categories: Dam gold, Main dish, Vegetarian Yield: 6 Servings MMMMM----------------------RICHARD SIMMONS--------------------------- MMMMM-----------------DEAL-A-MEAL GOLD COOKBOOK---------------------- 1/4 c Onion; chopped 1/4 c Green chiles; canned 1 1/2 c Jack cheese; shred (6 oz) 1/2 c Mozzarella; shred (2 oz) 6 sl Whole wheat bread 2 tb Dijon-style mustard 3 c Evaporated skim milk ds Salt & pepper; each 4 Eggs; lightly beaten Cilantro sprig ;sliced chile for garnish 1) Preheat oven to 350 degrees F. 2) In bowl, toss onion, green chiles, and cheese. 3) Spread bread with mustard and cut bread into 1-inch squares. 4) In 2-quart baking dish, layer bread and cheese mixture alternately, ending with cheese. 5) Combine milk, salt, pepper and eggs. Pour over cheese and bread. Press bread lightly into liquid to moisten. 6) Stand baking dish in pan containing 1 inch hot water. 7) Bake 1 hour, or until knife inserted near center comes out clean. 8) Garnish with cilantro sprig and sliced chile if desired. If you don't like green chiles, make this anyway, by doubling the amount of onion and omitting the chiles.
